Starting Tuesday, September 1, 2026, ESTINATE HOTEL NAHA will introduce a limited-time autumn menu, available both as part of a special stay package and at the hotel’s in-house restaurant, ESTINATE LOUNGE NAHA.

A Seasonal Menu Where Shima-Dofu Meets Dessert — With Texture Front and Center
Shima-dofu, a beloved Okinawan soul food, is a traditional ingredient known for its rich, deep soybean flavor and firm, satisfying texture. Because it holds its shape well thanks to its low water content, it’s typically used in stir-fries and simmered dishes. But its rich flavor and silky-smooth texture also happen to pair beautifully with sweets and drinks.
This fall, ESTINATE HOTEL NAHA is offering a limited-time menu that reimagines shima-dofu in an entirely new way. Made with rich shima-dofu and soy milk from the long-established tofu shop Ikedaya (3rd generation), the lineup blends this traditional ingredient with autumn flavors like chestnut, grape, and apple in a series of desserts and drinks. Come savor this season-only creation, where Okinawan tradition meets the bounty of fall.

■”Shima-Dofu Textured Mont Blanc” — ¥880 (tax included)

Crispy soy milk tuile, shaped to resemble falling leaves, sits beneath a generous swirl of smooth Mont Blanc cream, where the rich aroma of chestnut meets the deep flavor of shima-dofu. In the middle layer, a golden-baked pastry crust is topped with shikuwasa-flavored custard cream, grapes, and a dragon fruit and berry sauce, adding a bright, fruity tang. A shima-dofu rare cheesecake layer brings a light acidity, while the base features a moist, fluffy crème d’amande made with shima-dofu. Bringing together Mont Blanc, rare cheesecake, and pastry in a single dish, this dessert layers together a variety of sweet elements.
Crisp, smooth, and moist textures come together in every bite — a dessert that keeps you interested all the way to the last mouthful.
