THE LIVELY KITCHEN FUKUOKA HAKATA, the all-day dining restaurant attached to THE LIVELY FUKUOKA HAKATA, serves modern Japanese-Italian cuisine that pairs Japanese ingredients and tableware with Italian cooking techniques. Each dish is delicately plated on substantial Japanese ceramics, blending the chef’s favorite trends with seasonal expression to create truly original plates. Beyond the flavors themselves, the presentation style and the story behind each dish are part of the appeal. With a unique menu lineup and relaxed, casual service, the restaurant delivers a dining experience full of surprise and discovery. Several course options are available to suit different occasions and needs, and guests who aren’t staying at the hotel are also welcome to enjoy the restaurant’s one-of-a-kind atmosphere.
This year’s Christmas menu brings free-spirited creativity to Japanese ingredients and traditional cooking methods. Winter staples like salmon, shirako (cod milt), red seabream, and shungiku (garland chrysanthemum) take center stage, each carefully prepared to bring out its natural character and reimagined with a fresh twist.
Among the warm dishes, the “Amakusa Guinea Fowl YAKITORI” reimagines guinea fowl from Kumamoto Prefecture in the style of yakitori, a dish deeply tied to Fukuoka’s food culture. The main meat course features ezo deer from Nemuro, Hokkaido, a true taste of winter, prepared to bring out its rich, natural flavor and tender texture.

Chef Yasutomo Nakamura
Born in Kumamoto Prefecture in 1975, Chef Nakamura studied at the Nakamura Culinary and Confectionery Institute. After graduating, he began his culinary career at the Grand Hyatt Fukuoka, later building his experience at Italian restaurants and large-scale dining establishments, where he eventually served as executive chef overseeing Fukuoka operations. He took on the role of head chef at THE LIVELY KITCHEN FUKUOKA HAKATA when it opened in 2019.
