Limited-Time Christmas Menu at ESTINATE HOTEL NAHA: Cheesecake Made with Okinawa’s Traditional Herb “Fuchiba” Debuts December 1

At ESTINATE HOTEL NAHA, from Monday, December 1, 2025, we will offer Christmas-limited menus at the hotel restaurant “ESTINATE LOUNGE NAHA” as well as through our stay plans.
Christmas-only sweets and drinks with the aroma of Okinawan herbs and spices
Starting Monday, December 1, 2025, ESTINATE HOTEL NAHA will introduce a limited-time Christmas menu featuring Okinawan herbs and spices such as fuchiba and getto (shell ginger).
Fuchiba—Okinawan nishiyomogi—is milder and less bitter than the mugwort commonly used in mainland Japan. Known for its fresh aroma and gentle bitterness, it has long been used to complement pork and goat dishes by softening strong flavors.
Okinawa’s herb culture developed uniquely during the Ryukyu Kingdom era, when ingredients, spices, and culinary techniques from China and Southeast Asia blended with local traditions.
For this Christmas menu, we reimagine this traditional ingredient with a modern sensibility, offering cakes and drinks that bring a festive twist to Okinawan flavors. Additional dishes featuring herbs and spices such as getto and iichoba will also be available.

■ Double cheesecake with a perfect match of Okinawa’s classic herb “fuchiba” and cheese

“Fuchiba Candle Cake” 900 yen (tax included)
A double cheesecake made with plenty of Okinawan ingredients: a rich Basque-style baked cheesecake and a smooth rare cheesecake.
Two kinds of cheesecake with the fresh flavor of Okinawan Nishiyomogi “fuchiba” kneaded into the batter are served with a special cream scented with getto. The candle part is decorated with ruby-colored roselle (also known as edible hibiscus) to express the light of a candle. You can enjoy the deep flavor created by the unexpected pairing of fuchiba and cheese. Enjoy the charm of Okinawan ingredients while getting into the Christmas mood.
■ Three drinks to fully enjoy the flavor of fuchiba

“Fuchiba Lemon Squash” 700 yen (tax included): A refreshing drink made with homemade lemonade syrup and the flavor of fuchiba. The sourness of the lemon, the gentle bitterness of the fuchiba, and the soft sweetness of honey are perfectly balanced, leaving a clean aftertaste.
“Fuchiba Mojito” 900 yen (tax included): An original mojito made with ISLAND RUM from Okinawa and fuchiba. It is a cocktail where you can enjoy the fresh and cooling taste of both mint and fuchiba.
“Fuchiba Latte (hot)” 700 yen (tax included): A latte in which you can enjoy the characteristic mild bitterness and refreshing aroma of fuchiba.
■ Cocktails and food that highlight Okinawan herbs and spices such as getto and iichoba

“Getto Strawberry Sparkling” 900 yen (tax included)
A sweet and easy-to-drink cocktail made by combining strawberries with getto syrup and topping it with sparkling wine.

“Tacos – Roast Chicken with Pipachi and Iichoba” 550 yen (tax included): Tacos with roast chicken marinated in iichoba (fennel) and pipachi (island pepper).
“Roast Chicken with Pipachi and Iichoba” Whole: 3,300 yen / Half: 1,700 yen: Roast chicken flavored with homemade iichoba oil and slowly cooked at a low temperature until tender. Pipachi adds a fresh, spicy kick that gives the flavor an extra accent. Iichoba means “a leaf that is good for the stomach and intestines” in the Okinawan language and has long been considered to have medicinal effects. Pipachi is also believed to help improve blood circulation and strengthen blood vessels, making this a dish that can help you feel energized from the inside. Two kinds of sauces are available: pipachi gravy and iichoba sauce. You can enjoy the change in flavor with the different sauces.
