“A cup brewed with theory” can taste this good?
On May 20, we hosted a special event called the Graphic Coffee Seminar!
Led by a professional barista, this hands-on session was designed to help participants learn how to brew café-quality coffee at home.
For 90 minutes, guests were surrounded by the warm aroma of coffee while learning pro-level brewing techniques. Here’s a recap of what the event was like.

The seminar was led by Mr. Ōnuki, one of our baristas at Graphic Grill & Bar.
Held in a small group format, the session maintained a cozy, relaxed vibe throughout.
Many participants had their eyes opened to how much their usual brewing methods could improve just by understanding the theory behind them.
It was truly a time full of new discoveries.

■ From Hand-Drip Basics to Pro Tips
The seminar began with an introduction to the tools needed for hand-drip coffee and an explanation of the basic brewing process. There was a detailed breakdown of five key factors that affect flavor: coffee dose, water amount, temperature, extraction time, and grind size.
“You understand what makes coffee bad, and you’ll start to see what makes it good,” said Mr. Ōnuki.
To prove the point, he even demonstrated how to intentionally brew a “bad” cup of coffee.
Guests were amazed at how the flavor could change so dramatically, even when using the same beans, just by altering the extraction conditions.

■ Tasting the Difference with Specialty Beans
The beans used during the seminar were special ones sourced from sol’s coffee, a well-known roaster based in Tokyo and the same brand we use at Graphic Grill & Bar.
As participants carefully brewed their coffee while focusing on the aroma, acidity, richness, and aftertaste, many commented that it was nothing like the coffee they usually drank.
There was also a lesson on how to properly brew with drip bags. Guests nodded in agreement as they learned how to make a truly tasty cup—even when taking the easy route.
■ Beginner-Friendly and Deeply Educational, Thanks to the Small Group Format
The small group setup allowed Mr. Ōnuki to give personal attention to each participant.
The relaxed atmosphere made it easy to ask questions, and everyone was able to dive deep into the world of coffee at their own pace.
