A Seasonal Menu Showcasing the New Charm of Okinawa’s Soul Food “Shima Tofu”
Shima Tofu, beloved as Okinawa’s soul food, is a traditional ingredient known for its rich soybean flavor and firm texture. Because it contains less water and doesn’t easily crumble, many people may associate it mainly with stir-fries or simmered dishes. However, its rich taste and smooth texture also pair wonderfully with sweets and drinks.
This autumn, ESTINATE HOTEL NAHA presents a limited-time seasonal menu offering a fresh way to enjoy Shima Tofu. Made with the rich Shima Tofu and soy milk from the long-established tofu shop, Sandaime Ikedaya, and paired with seasonal autumn ingredients such as purple yam and chestnut, these treats deliver comforting sweetness and a layered depth of flavor.

This parfait blends Okinawan and autumn flavors with ingredients such as Shima Tofu, purple yam, and sweet potato, presented in various forms like ice cream, chips, candied sweet potato, and cream. The subtle saltiness of Shima Tofu meets the natural sweetness of purple yam and sweet potato, creating a unique parfait where every bite offers a different harmony of flavor and texture.
■“THE NUTTY SHIMA-TOFU TART (Shima Tofu & Nut Tart)” – 550 yen (tax included)
A tart made with an abundance of autumn flavors like chestnuts and nuts, finished with a healthy Shima Tofu cream. The carefully strained tofu cream is smooth and flavorful, while the crunch of roasted nuts and gentle sweetness of chestnuts create a mild, autumn-inspired taste.
■“SWEET TOFU (Shima Tofu & Purple Yam Rum Milk)” – 1,000 yen (tax included)
A cup blending the rich soy milk from Sandaime Ikedaya with “ISLAND RUM” from Mizuho Shuzo. The mellow richness of soy milk and the aromatic depth of rum combine to create a dessert cocktail reminiscent of a premium sweet potato dessert.

A sweet and rich soy latte made with plenty of thick soy milk.
The hot version is topped with caramelized cream, adding a hint of toasty bitterness that enhances the natural sweetness of purple yam and soy milk. The iced version is topped with plenty of soy milk cream, offering a rich sweetness with evolving flavors as you drink.

A special accommodation plan is available where guests can enjoy either the parfait or tart paired with the hotel’s original blend coffee during their stay.
