This spring, meet the Ichigo Barifuku: a completely new take on the classic strawberry daifuku.
At first glance, it looks almost like a delicate mille-feuille — and in a way, it is. Instead of mochi, the outer shell is made from ultra-thin phyllo pastry (pâte filo), layered and baked to a golden crisp. The moment your fork breaks through, you’re greeted with a satisfying crack — a sound that instantly turns everything you thought you knew about strawberry daifuku on its head.
Inside, three generous layers of mousse and cream await.
・White bean mousse: A light, airy mousse made from a blend of white bean paste and mascarpone, folded with fresh cream and finished with a gentle hint of cinnamon.
・Mochi cream: A silky, stretchy cream that captures the soft, yielding texture of kuzumochi and warabimochi combined.
・Rose-scented crème fouettée: Whipped cream infused with rose syrup, adding a delicate floral fragrance to every bite.
