At THE LIVELY OSAKA HONMACHI, the dessert experience is built around a concept called “Émoode” — a blend of emotional and mode — crafted to surprise and delight with every spoonful. The hotel’s in-house chef brings together the refined techniques and eye for beauty developed over a distinguished culinary career with a bold, convention-free creativity, resulting in seasonal hybrid desserts that bridge Japanese and French traditions. With 20 years of experience in French cuisine, the chef creates sweets that feel both ahead of the curve and grounded in the classics — original, sophisticated, and genuinely moving. Each dessert is as visually stunning as it is delicious, with the kind of presentation that makes you reach for your camera before your fork, backed by the depth and craftsmanship of authentic French technique.
This summer, meet “Pururi Shari.”
This playful creation pairs mizushingenmochi — a delicate, water-based Japanese wagashi that’s a staple of the summer season — with granité, a classic French frozen dessert. The result is a Japanese-French hybrid that’s as fun to eat as it is to look at, full of contrasting textures and refreshing, layered flavor.
Cradled inside the smooth, jiggly mizushingenmochi is a rich crème anglaise — the custard-based sauce beloved in French patisserie. When your spoon breaks through, the sauce melts out gently, blending with the mochi’s cool, delicate texture for a finish that’s silky and utterly satisfying. The addition of shaved, crunchy granité brings a bright contrast that adds freshness and depth to every bite. Rounding out the dessert is a white chocolate sauce infused with sencha green tea, paired with a fine crumble — a soft, aromatic nod to Japan that ties the whole creation together.

Chef Kohei Nishiura
After honing his craft at restaurants in Kobe, Osaka, and France, Chef Nishiura served as head chef at several French restaurants across Osaka, including La Chic, a modern French establishment in Yodoyabashi. In December 2019, he joined THE LIVELY KITCHEN OSAKA HONMACHI as its head chef. His cooking strikes a careful balance between classic and contemporary French, while drawing on the seasonal ingredients shaped by Japan’s four distinct seasons — always aiming for dishes that feel alive and spark genuine joy. Leveraging the sensibility and knowledge built throughout his career, he continues to bring French cuisine closer to everyday life, championing the approachable, “casual French” spirit that makes THE LIVELY OSAKA HONMACHI so distinctly its own.
