A New Chapter

In a word, this drink is “gentle and elegant.” It is a truly special plum-based creation.
The base is a plum wine made from Hokkaido-grown plums. By blending it with almond liqueur, we’ve created a soft, delicate aroma that spreads gently across the palate.
We’ve also added a touch of apple brandy and sweet potato shochu to provide depth, ensuring it isn’t just sweet, but complex. As you bring the glass closer, the first thing you’ll notice is the gorgeous floral fragrance. When you take a sip, a fruity sweetness unfolds before disappearing with a light, crisp finish.
Much like the Bungo plum blossom, which carries the floral meaning of “a new beginning,” this drink has a strong heart within its light profile—perfect for the season ahead.

As the snow melts and sprouts begin to appear, we are also offering a drink featuring “Fukinotou” (butterbur sprouts), a classic Hokkaido mountain vegetable harvested throughout the region in April. Enjoy the fresh taste of spring in Otaru with this refreshing Gin & Tonic.
Fukinotou Gin & Tonic

Fukinotou is a representative mountain vegetable of spring in Hokkaido. You might think, “Doesn’t that sound a bit bitter?” but in this drink, that subtle bitterness acts as the perfect accent.
We use “#0210 Fukinotou Compound Gin” from Benizakura Distillery, the first craft gin distillery in Hokkaido. It offers a wild and unique flavor profile, characterized by the fresh scent and solid bitterness of the butterbur sprouts.
The finish is clean, and the aroma spreads as lightly as a spring breeze. This is a drink that bottles up the nature of Hokkaido—a taste you truly can’t find anywhere else. Please feel free to come by and give it a try!
