Hello, I’m Thibault, the wine advisor at UNWIND HOTEL & BAR OTARU, a lifestyle hotel in Hokkaido, Otaru.

At our hotel, we offer a free-flowing wine and soft drink service called “Free Wine Service” exclusively for guests from 5 p.m. to 6:30 p.m. in the lobby bar, Bar Ignis Otaru, on the first floor.

You can enjoy three selections each of red and white wines curated by our hotel’s wine advisor, along with soft drinks.

Moreover, during this Free Wine Service, we offer a premium wine for tasting (available at an additional cost) every month.

This time, we are introducing the premium wine for March, which is the third selection of the year 2024, labeled as “O.”

A staple from OSA Winery, themed around “enhancing home cooking.”

The gentle sweet aroma of Delaware makes this wine approachable even for those who don’t typically drink dry wines.

It pairs exceptionally well with “dashi” (Japanese soup stock), making you crave dishes like oden and hot pot.

This wine is crafted at OSA WINERY located in Otaru City.

What is OSA WINERY?

OSA WINERY is located in the heart of Otaru. It’s just a 30-second walk from our hotel! Wine is brewed and sold in the historic stone cellar, where you can feel the weight of history.

The vineyards are in two areas: Otaru Shioya and Yoichi Noboru. They are the only company in Otaru cultivating grapes specifically for wine production.

They prioritize compatibility with meals and craft aromatic white and rosé wines.

Their goal is for their wines to bring happiness to everyone who holds them, gives them, receives them and drinks them.

What kind of wine is “O”?

This is a white wine meticulously blended with fully ripened Delaware and Tabiji grapes sourced from contract farmers whose faces they know, along with Pinot Gris grapes from their own vineyard in Otaru.

The crafting process, like other wines, involves carefully selecting healthy grapes immediately after harvesting to preserve their aroma and taste. They are then pressed at low pressure in the winery, with the help of experienced volunteer grape selectors, ensuring only healthy fruits are used swiftly. Each variety is fermented at low temperatures in stainless steel tanks according to harvest date and grape type, then aged in the cellar over the winter.

The following spring, blending takes place while checking compatibility with dishes. They experimented with blending ratios incrementally, adding the refreshing acidity and spiciness of Tabiji, and the richness and depth of Pinot Gris to the friendly and approachable flavor of Delaware, achieving a well-balanced taste.

Summer 2022 was typical for Hokkaido, resulting in a wine with a firm aroma and acidity and an elegant finish. It carries refreshing citrusy notes reminiscent of yuzu and hassaku orange, with hints of sweetness like pear, making it a versatile wine that pairs well with a wide range of cuisines, both Japanese and Western. Named “dosanco bianco” with the nickname of “Hokkaido-native white,” it aims to accompany a wide range of our daily meals, reflecting our Hokkaido roots.
